Compared to standard European chili powder, Gochugaru is not simply hot — it is characterised by a subtle sweetness and a rich, vivid red colour. Its heat level is medium, noticeably milder than Indian chili powder, and it produces a far more brilliant red hue. True to its name, the most representative use of this product is making Gochujang at home. In Korean cooking, Gochujang plays a role similar to that of tomato paste or harissa in Mediterranean cuisine — it serves as a broad base for sauces, marinades, and dips. Its fine particle size allows it to dissolve evenly into sauces, creating a smooth texture. Beyond Gochujang, it is used in a wide range of Korean dishes including the Bibimbap (mixed rice bowl) seasoning sauce, Tteokbokki sauce, and the marinade for Jeyuk-bokkeum (spicy stir-fried pork). It is a pure spice made from 100% dried, ground red chillies, with no fermentation process involved — quite different from fermented products such as Kimchi or Doenjang. Storage is the same as for any standard spice. Before opening, keep in a cool, dry place away from direct sunlight. After opening, store in an airtight container in the refrigerator to preserve the vivid red colour and aroma for longer. As Gochugaru is sensitive to moisture, it is important to seal the container tightly after each use. When refrigerated, the product is best used within approximately 6 months to 1 year of opening for optimum quality.
454g is a large-format size commonly used in Korean households, and for a family that cooks Korean food regularly, it will typically last around 2 to 4 months. In terms of Gochujang production, approximately 100g of fine Gochugaru yields around 350–400g of finished Gochujang. Using the full 454g would therefore produce approximately 1.5–1.8kg of Gochujang. Of course, it is also common to use the powder gradually across a variety of dishes as a seasoning. Since a single serving can range from 1 teaspoon (approximately 2–3g) to several tablespoons depending on the recipe, this is a highly practical size even for European households just beginning to explore Korean cooking.
