The Brewing Tradition of Authentic Japanese Lager

Sapporo was born in 1876 in Hokkaido during the Meiji era, a time when Japan was actively embracing Western brewing techniques. The Japanese government brought master brewer Seibei Nakagawa — who had trained in Germany — to establish an authentic German-style lager tradition on Japanese soil. This makes Sapporo one of the oldest brewing legacies in Japan.

Bottom Fermentation (Kaimen Hakko · Bottom Fermentation) is the cornerstone of lager brewing. Yeast (Saccharomyces pastorianus) ferments slowly at low temperatures of around 7–13°C, settling to the bottom of the fermentation vessel. During this process, malted barley, rice, and hops combine to produce a clean, refined flavour. After fermentation, the beer undergoes an additional period of cold conditioning (lagering) to achieve its characteristic smooth finish.

For European drinkers, this places Sapporo in the same family as German Pilsner or Czech lager in terms of brewing method. What sets Sapporo apart is its distinctly Japanese character — the use of rice alongside barley creates a lighter, crisper flavour profile. Just as wine varies by grape variety and terroir, Sapporo's unique identity is shaped by Japanese water, ingredients, and over a century of local brewing craft.

Japanese-Style Pairings · Izakaya Classics

Classic ways to enjoy Sapporo Beer in Japanese homes and izakaya (居酒屋) — experience authentic Japanese food and beer pairings.

Sushi
寿司
The combination of fresh fish and vinegared rice makes Sushi the most natural pairing for Sapporo's clean crispness. The lager's light body cleanses the palate without overpowering the delicate flavour of the fish.
Sashimi
刺身
A slice of Sashimi with soy sauce and wasabi, followed by a sip of ice-cold lager. In Japan, Sashimi and beer are considered the most fundamental pre-dinner pairing — a well-chilled Sapporo brings out the natural sweetness of the fish.
Tempura
天ぷら
Lightly battered and fried prawns and vegetables — Tempura is a perfect match for Sapporo's refreshing crispness. The carbonation cuts through the richness of the batter, keeping each bite light and satisfying.
Karaage
唐揚げ
Japanese fried chicken marinated in soy sauce and ginger, then fried to a golden crisp — Karaage is the quintessential izakaya snack. Sapporo's clean lager is the ideal companion to its savoury, crunchy character.
Yakitori
焼き鳥
Charcoal-grilled chicken skewers are a symbol of the Japanese izakaya. Whether seasoned with tare (soy glaze) or shio (salt), Yakitori paired with an ice-cold Sapporo is one of Japan's most beloved evening rituals.
Gyoza
餃子
Japanese pan-fried dumplings — crispy on the bottom, tender on top. The rich flavour of pork and chives is perfectly balanced by Sapporo's gentle hop bitterness, making Gyoza and lager a classic combo at ramen shops and izakaya alike.
