Mild and smooth with no heat, defined by the deep umami characteristic of naturally fermented shoyu. The most recommended entry-level style for those trying Japanese ramen for the first time.

Japanese Traditionally Fermented Soy Sauce — The Story of Shoyu (醤油)

The defining flavour of this ramen comes from Shoyu (醤油), Japan's traditional fermented seasoning. Shoyu ramen is considered the oldest style of Tokyo ramen and the original form of Japanese ramen — characterised by a clean yet deeply flavoured, clear brown broth.

Shoyu is made by combining cooked soybeans (SOY) and roasted wheat (WHEAT) with koji mould (Aspergillus oryzae, known in Japanese as koji), then slowly fermenting and maturing the mixture over several months. During this lengthy fermentation process, proteins are broken down into amino acids, giving rise to the deep, complex flavour that Japanese scientists first identified and named over a century ago — the "fifth taste": umami (旨味).

To draw a parallel with European food culture: it is the same principle by which Parmesan cheese develops concentrated flavour through 24 months of ageing, or by which sauerkraut and wine acquire depth through the power of time. A single drop of shoyu holds months of time and microbial craft.

※ This ramen itself is not a fermented food. It is the soy sauce powder used in the seasoning that is produced using traditional fermentation methods.

Japanese Ways to Enjoy · 日本流の楽しみ方

Six ways to enjoy Oyakata Shoyu Ramen as it is eaten in Japanese households — from the most authentic preparation to popular variations among Japanese students.

Classic Shoyu Ramen
醤油ラーメン
The most straightforward preparation: pour boiling water into the cup and wait 5 minutes. The most common lunchtime meal in Japanese homes and workplaces, faithfully recreating the classic bowl served at Tokyo ramen restaurants.
Ajitama Ramen
味玉ラーメン
The definitive ramen restaurant topping: a soft-boiled marinated egg (ajitama) halved and placed on top. As the runny yolk blends into the broth, the flavour becomes richer and more rounded. The most popular ramen topping in Japan.
Chashu Ramen
チャーシュー麺
Add two or three slices of chashu (チャーシュー) — pork belly braised in soy sauce — and the bowl becomes a full ramen restaurant experience. The fermented depth of shoyu and the sweet-savoury braised pork are the most classic Japanese pairing.
Yasai Ramen
野菜ラーメン
A Japanese vegetable ramen style loaded with bean sprouts, cabbage, corn, and spring onions. The clean shoyu broth brings out the natural sweetness of the vegetables, making it a popular one-bowl meal in Japanese households.
Tsukemen Style
つけ麺風
Use less water to create a concentrated broth, then lift the noodles out separately and dip them in. The noodles retain a firmer, chewier texture, and the concentrated shoyu broth delivers an even more intense umami experience.
Shime Gohan
締めご飯
After finishing the noodles, add warm steamed rice (gohan) to the remaining broth as a final bite. Rice soaked in shoyu-infused broth is the secret pleasure that dedicated Japanese ramen lovers never skip.

Frequently Asked Questions (FAQ)
What is Oyakata Shoyu Ramen? What does "Shoyu" mean?

"Shoyu (醤油)" is the Japanese word for soy sauce. Soy sauce is a traditional Asian seasoning made by fermenting soybeans and wheat, delivering a deep, savoury umami flavour similar to Worcestershire sauce in European cuisine. Oyakata Shoyu Ramen is a 63g instant ramen cup (or packet) containing a shoyu-based seasoning powder, instant wheat noodles, and a garnish of corn, carrot, and chives. Simply add hot water and the dish is ready in minutes — bringing the flavour of a Japanese ramen restaurant to your home with ease.

Does this product contain any allergens?

Yes — please check carefully. This product contains gluten (from wheat) and soybean, both of which are among the EU's 14 major allergens. It may also be subject to cross-contamination with crustaceans, molluscs, sulphites, eggs, fish, celery, mustard, milk, and sesame during production. Anyone with an allergy to any of the above ingredients should check the product label directly before consumption.

Is this product suitable for vegetarians or vegans?

No, this product is not suitable for either vegetarians or vegans. The seasoning contains chicken extract and chicken fat, meaning it includes animal-derived ingredients. We do not recommend this product for those following a vegetarian or vegan diet.

Is this product Halal certified or gluten-free?

No. This product does not currently hold Halal certification and is not a gluten-free product. Wheat (gluten) and soybean are key ingredients, making it unsuitable for those requiring a Halal diet or a gluten-restricted diet.

Is this product high in sodium? Are there any health considerations to be aware of?

Yes, this product is relatively high in sodium (salt). As with instant ramen in general, the seasoning powder contains a significant amount of salt. Those following a low-sodium diet or who need to limit their sodium intake should take care. If you wish to reduce sodium, we recommend using only half of the seasoning powder rather than the full amount. Please refer to the product label for precise nutritional information.
