The defining flavour of this ramen comes from Shoyu (醤油), Japan's traditional fermented seasoning. Shoyu ramen is considered the oldest style of Tokyo ramen and the original form of Japanese ramen — characterised by a clean yet deeply flavoured, clear brown broth.
Shoyu is made by combining cooked soybeans (SOY) and roasted wheat (WHEAT) with koji mould (Aspergillus oryzae, known in Japanese as koji), then slowly fermenting and maturing the mixture over several months. During this lengthy fermentation process, proteins are broken down into amino acids, giving rise to the deep, complex flavour that Japanese scientists first identified and named over a century ago — the "fifth taste": umami (旨味).
To draw a parallel with European food culture: it is the same principle by which Parmesan cheese develops concentrated flavour through 24 months of ageing, or by which sauerkraut and wine acquire depth through the power of time. A single drop of shoyu holds months of time and microbial craft.
