Tamari (溜り) is considered the oldest form of soy sauce in Japan. While regular Shoyu is fermented from an equal blend of soybeans and wheat, Tamari is brewed almost entirely from soybeans — which means it is naturally free from gluten and develops a richer, deeper flavour. During the brewing process, steamed soybeans are inoculated with Aspergillus oryzae (koji mould) to create koji (麹). Brine is then added to form moromi (もろみ), a fermentation mash that slowly matures over several months. Throughout this time, naturally occurring yeasts and lactic acid bacteria work together to develop hundreds of aromatic compounds and a rich depth of umami. The moromi is finally pressed and filtered to yield a clear, full-bodied Tamari soy sauce.
