It is made by combining red pepper powder, glutinous rice, soybean (meju), and salt, then fermenting and ageing the mixture using traditional methods. Just as European cheeses and wines develop complex, deep flavours through ageing, Gochujang acquires a distinctive character through fermentation that goes far beyond simple heat — sweetness, saltiness, and umami (savouriness) all interweave in a uniquely layered flavour. This Chungjungone Sunchang Glutinous Brown Rice Gochujang is a premium product naturally fermented using glutinous brown rice and sun-dried Taeyangcho red pepper, following the recipe tradition of Sunchang — Korea's historic Gochujang-producing region. Think of it not as a straightforward hot sauce like Sriracha, but as a complex condiment with the deep fermented umami of Doenjang or miso alongside its heat.
