Authentic Korean Bag Ramyeon · Since 1988

Ottogi Jin Ramyeon has been one of Korea's most beloved bag ramyeon products since its launch in 1988. Its rich, deep broth is crafted from slow-simmered beef bone and brisket, generously seasoned with three traditional Korean naturally fermented condiments — soy sauce, Doenjang, and Gochujang. The "Mild Flavor" variety strikes a perfect balance for those new to spicy ramyeon — gently taming the heat while delivering a deeply satisfying bowl of umami.

Korean Fermentation · Traditional Method

While Jin Ramyeon noodles themselves are dried rather than fermented, the heart of their flavour comes from three traditional Korean naturally fermented condiments in the soup powder — soy sauce (ganjang), Doenjang (fermented soybean paste), and Gochujang (fermented red pepper paste). These three seasonings have been the foundation of Korean home cooking for centuries, each the result of a long, natural fermentation process.

Doenjang is made by mashing cooked soybeans into meju blocks, then naturally aging them for a minimum of 3 months and up to a year or more. Soy sauce is the liquid drawn from the same meju soaked in brine, while Gochujang is a fermented paste of glutinous rice, meju powder, and red pepper, aged naturally for several months. In all three, living microorganisms slowly break down the proteins in soybeans and grains, building deep umami and complex aroma.

To draw a parallel with European fermentation traditions — just as cheese develops deep flavour by aging milk, Doenjang develops rich saltiness and umami by aging soybeans. Just as wine gains complexity by fermenting grapes, Gochujang acquires depth far beyond simple heat by fermenting peppers and grains. Like sauerkraut or miso, Korean fermented condiments are authentic flavours shaped by the patience of natural time.

Discover the many ways Korean households enjoy Jin Ramyeon Mild — experience authentic Korean flavour in every bowl.

Jin Ramyeon
진라면 그대로
Bring 550ml of water to a boil, add the noodles, soup powder, and vegetable flakes, and cook for 4–5 minutes. The most classic and beloved way to enjoy it in Korea — a late-night snack or quick meal featuring a deep beef bone broth and gently spiced flavour.
Gyeran Ramyeon
계란 라면
Crack one egg into the pot during the last minute of cooking. The most popular topping in Korea — as the yolk breaks and blends into the broth, it becomes richer and creamier. A soft, runny yolk is the traditional way to enjoy it.
Kimchi Ramyeon
김치 라면
Add a generous handful of well-fermented Kimchi and cook together. The tangy acidity of fermented Kimchi melds beautifully with the beef bone broth, creating a fantastic balance. This combination is one of the reasons Korean households always keep Kimchi on hand.
Cheese Ramyeon
치즈 라면
Place a slice of processed cheese on top of the finished ramyeon and let it melt. Hugely popular in Korean snack restaurants and among students, the creamy richness of the cheese gently wraps around the mild spice.
Rabokki
라볶이
A classic Korean street food combination — Jin Ramyeon cooked together with Tteokbokki (Korean rice cakes). Chewy rice cakes, springy noodles, and a spicy Gochujang sauce all come together in one bowl. A favourite snack among Korean students.
Budae Jjigae
부대찌개 베이스
A Korean-style hot pot with ham, sausage, tofu, beans, and Kimchi simmered together in a large pot, with Jin Ramyeon added at the end. A uniquely Korean dish born after the Korean War, traditionally shared around the table with family and friends.

Frequently Asked Questions (FAQ)
What is Ottogi Jin Ramyeon Mild Flavor, and how is it different from ordinary instant noodles?

Ottogi Jin Ramyeon Mild Flavor is a product from Ottogi, one of Korea's most iconic instant ramyeon brands. "Mild Flavor" means a gentler spice level compared to the hot variety in the same range, with reduced chili content designed to be enjoyed comfortably by European consumers. The soup base contains traditional Korean naturally fermented ingredients — Doenjang (fermented soybean paste) and soy sauce — giving it a complex umami depth that goes well beyond a standard instant noodle. The principle is similar to how miso soup or aged fermented cheese develops deep flavour in European cuisine. The noodles are made from wheat flour in a wavy style that absorbs the broth well.

Does this product contain allergens? Is it safe for people with dairy or shellfish allergies?

⚠️ Important allergen information. Under EU food labelling regulations (Regulation 1169/2011), this product contains the following 4 major allergens: ① Gluten (wheat flour and wheat gluten) ② Soybeans (soy protein, soy sauce, etc.) ③ Milk (dairy-derived plant protein present in the soup base) ④ Molluscs (oyster extract present in the kelp/seaweed component). Additionally, as Ottogi manufactures other products in the same facility, there is a risk of cross-contamination with eggs, peanuts, fish, crustaceans, and sesame. If you have a milk or mollusc (shellfish/oyster) allergy, please check the label on the current product packaging directly before consumption.

Is this product suitable for vegans or vegetarians?

No, this product is not suitable for vegans or vegetarians. The soup base contains dairy-derived ingredients (plant protein of dairy origin) and molluscs (oyster extract). The product also does not carry Halal certification. While the dried vegetable mix (Chinese cabbage, carrot, mushroom, spring onion, seaweed) may give the impression of a vegetarian product, the soup ingredients make it unsuitable for a plant-based diet. If you are looking for a vegan or vegetarian Korean ramyeon, we recommend exploring other options.

I've heard this product is high in sodium — are there any health considerations I should be aware of?

Yes, this is an important point. Ottogi Jin Ramyeon Mild Flavor contains approximately 4.2g of salt per 100g dry weight, placing it among the higher-sodium Korean instant ramyeon products. Given the EU recommended daily sodium intake for adults (2,000mg), a single serving can account for a significant proportion of that allowance. For those monitoring sodium intake, we suggest using only half the soup powder rather than the full sachet, or adding vegetables and tofu to improve the nutritional balance of the bowl. Please note that this product is not a "low-sodium" or "health food" product.

How do I cook and store this product?

Cooking instructions: Bring 550ml of water to a boil in a pot, then add the noodles and vegetable flakes and cook for approximately 4–5 minutes. Add the soup powder before turning off the heat and stir well to combine. You can enrich the bowl with optional toppings such as an egg, a slice of cheese, or fresh vegetables (spinach, mushrooms, etc.). It can also be prepared conveniently in a microwave-safe container. Storage: Keep away from direct sunlight and store in a cool, dry place. Unopened packs can be stored at room temperature — check the best-before date printed on the packaging. Once cooked, consume immediately.
