Pour 600ml of water into a pot and bring to a boil over high heat. Once it's rolling, move to the next step.
Dice 150g of beef into 1cm cubes. This is your topping, so don't chop it too small.
Heat 1 tbsp oil in a small pan over medium-high, add the beef and stir-fry. When the surface browns, drizzle in 1 tbsp soy sauce, cook 30 more seconds, then turn off the heat. Be careful not to burn it.
Add both the Chapagetti and Neoguri noodle blocks to the boiling water. Do NOT add the seasoning packets yet — adding them now means the flavor drains away when you pour off the water.
Boil the noodles for 4 minutes over medium-high heat, stirring with chopsticks so they don't stick. Slightly firm noodles are perfect here.
Scoop out and reserve 200ml of the noodle water in a cup. Drain the rest. Keeping this noodle water is the key step that prevents failure.
Return the drained noodles to the pot and add HALF of the Chapagetti liquid jjajang packet and HALF of the Neoguri powder. Neoguri powder is spicy, so add half first to control the heat.
Add 4–5 tbsp of the reserved noodle water plus the olive-oil flakes from the Chapagetti packet, and toss over low heat. It's done when the sauce coats the noodles with just a little moisture. If too watery, remove some liquid.
Turn off the heat, plate the noodles, and pile the stir-fried beef generously on top.
Sprinkle thinly sliced green onion on top if you like, for the full movie look.
How do I make it less spicy?
Add only half or a third of the Neoguri powder packet. The heat drops sharply and even kids can enjoy it. For extra spice, use the full packet.
How many servings is this?
This set makes one generous serving or two smaller portions. For a solid two servings, split the noodles and prepare a little more beef.
How do I store leftovers?
Ram-don is a mixed (dry) noodle dish and tastes best fresh. Refrigerate leftovers in an airtight container and eat within 1 day; reheat over low heat with 1–2 tbsp of water or noodle water.
What can I use instead of beef?
Mushrooms or pork work great, and you can skip the meat entirely — the noodles are delicious on their own. For a vegetarian version, stir-fry mushrooms in the soy sauce instead.
What cooking tools do I need?
Just one pot, one small pan (for the beef), chopsticks, and a measuring cup or ladle. No pan? Just cook the beef in the pot first, then remove it.
I'm a beginner — any tips to not mess it up?
Remember two things: first, never add the seasoning to the water; second, don't drain all the water — save some noodle water. Do these two and you won't fail.
