The soy sauce base (46%) at the heart of this teriyaki sauce is crafted using the traditional Japanese method: soybeans and wheat are inoculated with koji mould, submerged in brine, and naturally brewed over several months.

During this fermentation process, the proteins in the soybeans are slowly broken down, developing a deep umami character, a subtle natural sweetness, and a rich, complex aroma. The same ingredient transformed by slow fermentation becomes an entirely different ingredient compared to one simply boiled.

Just as European cheese deepens in flavour through ageing, and wine develops complexity over time — Japanese soy sauce is made by the same principle.
