Authentic Korean Naturally Fermented Cooking Essence
Sempio Yeondu is a Korean-style cooking essence made by Sempio, Korea's leading fermentation specialist, using a naturally fermented soybean liquid as its base. The Cheongyang Chili (Red) version infuses Korea's native Cheongyang chili peppers to add a natural spicy kick and deep umami flavour. Used in Korean households as the finishing spoonful in soups, stews, stir-fries, and seasoned dishes, it completes the flavour without any artificial seasonings — relying solely on the depth of fermented soy.

Like wine tasting notes — the balance of flavour across 5 dimensions
In Korea, soybean fermentation is a tradition spanning over a thousand years. Meju — blocks of cooked soybeans left to ferment naturally — forms the flavour foundation of Korean cuisine, giving rise to fermented condiments such as soy sauce (ganjang), Doenjang (fermented soybean paste), and Gochujang (red pepper paste). Sempio has carried on this soybean fermentation tradition since 1946, making it Korea's foremost fermentation specialist.
Yeondu is a Korean cooking essence perfected by Sempio through years of research. Based on a naturally fermented soybean liquid, it captures the deep umami that develops as soybeans slowly break down during fermentation — all in a single bottle. The Cheongyang Chili (Red) version adds an infusion of Korea's native Cheongyang chili peppers, onion, garlic, ginger, and green onion, lending a natural spicy warmth and layered flavour. No artificial seasonings (MSG) — the taste comes entirely from the power of fermented soy.
Just as European cheese gains its deep flavour through the natural fermentation of milk, wine develops complex aromas through the fermentation of grapes, and sauerkraut achieves its gentle acidity by fermenting cabbage — Korean soybean fermentation is equally a craft shaped by time. Yeondu distils the essence of that long fermentation tradition into a single spoonful: the most quintessentially Korean all-purpose seasoning.

Yeondu Cheongyang Chili is a liquid seasoning made using traditional Korean fermentation techniques. Like regular soy sauce, it is based on a naturally fermented soybean liquid, but it also incorporates Korean Cheongyang chili concentrate, onion, garlic, ginger, and green onion concentrates to deliver both umami and spicy heat in one bottle. While Western hot sauces tend to focus on acidity and heat, Yeondu Cheongyang Chili is defined by the deep, complex umami that comes from fermentation, layered with the clean spiciness characteristic of Cheongyang chili. Just as cheese and wine develop rich flavours through ageing, this product achieves a multi-layered taste through fermentation — far beyond simple saltiness. It is a naturally fermented seasoning that adds powerful flavour to dishes even in small quantities.
Yes, Sempio Yeondu Cheongyang Chili is suitable for both Vegans and Vegetarians. No animal-derived ingredients are used; all components are plant-based (soybean, Cheongyang chili, onion, garlic, ginger, green onion) along with sea salt. It is an excellent seasoning for vegan and vegetarian Korean cooking, as it delivers rich umami from fermentation without any meat or seafood.
The ingredients of Yeondu Cheongyang Chili do not include wheat (gluten). However, there is an important note: the Korean domestic version states it is produced in the same facility as products containing wheat, meaning there is a risk of cross-contamination. The EU export version (globalsempio.com) carries a gluten-free certification. If you have coeliac disease or severe gluten sensitivity, please check the gluten-free certification directly on the label of the product you have purchased. Please also note that this product contains soybeans, so those with a soy allergy should avoid consumption.
Yes, the ingredient list includes fermentation alcohol. Fermentation alcohol is an alcoholic component produced during the fermentation process or added in small amounts for preservation. Although the content is low given its use as a seasoning, alcohol is present. Therefore, this product is not currently Halal certified. It may not be suitable for those strictly following a Halal diet — please confirm before purchasing.
Yeondu Cheongyang Chili is based on Korea's Cheongyang chili pepper, which measures approximately 4,000–12,000 SHU on the Scoville scale — a medium to strong heat level. Rather than pure heat, it delivers a complex flavour profile combining the spiciness of Cheongyang chili with the deep umami of fermented soy. Usage is straightforward: add a small amount in place of soy sauce to braised tofu, seasoned vegetables, or stir-fries, or use it to finish the seasoning of soups and stews. As a highly concentrated seasoning with a very high sodium content, use in small quantities is recommended (approx. 5ml per serving). Refrigerate after opening and use within the best-before date shown on the label.
This seasoning doesn't have any bad chemical ingredient. Most of them are very natural and give some umami on your food. For me, it's not that spicy though.
