Authentic Korean Home-Style Braising Sauce
Inspired by the famous Galchi-jorim alley of Namdaemun Market in Seoul, this is an authentic Korean braising sauce. Simply pour it over hairtail (beltfish) and simmer — the result is a spicy, subtly sweet, and deeply savoury Korean home-style dish. Versatile enough to use with radish, tofu, chicken, or pork, this is a true all-purpose Korean braising sauce.

Sempio Namdaemun Galchi-jorim Sauce is a concentrated cooking sauce for making Korean-style braised fish (Jorim). The traditional method is to use it with hairtail (beltfish), but it also pairs well with mackerel or other white fish. This is a cooking ingredient, not a ready-to-eat product. Pour the sauce over the fish, dilute with water, cover with a lid, and simmer over medium heat to create a deeply flavourful Korean braised dish. As this is a concentrated sauce with a high salt content, always dilute it with water before use.
Yes, the sauce itself is suitable for both vegans and vegetarians. It contains no animal-derived ingredients. However, this sauce was originally designed for cooking fish (hairtail). If you follow a vegan or vegetarian diet, you can use it with plant-based ingredients such as tofu, aubergine, or mushrooms instead of fish.
Yes, in accordance with EU food labelling regulations (EU Regulation 1169/2011), this product contains the following 3 allergens: ① Gluten — wheat is present in the soy sauce component. ② Soybeans — present in the soy sauce component. ③ Sesame — sesame oil is included. Those with gluten intolerance (including coeliac disease), soy allergy, or sesame allergy should avoid this product. Additionally, as this sauce is intended for cooking fish (hairtail/beltfish), those with fish allergies should exercise caution during preparation. The sauce itself does not contain fish as an ingredient.
This sauce is a complex seasoning designed to deliver the authentic taste of Korean braised dishes. It combines the sharp, spicy heat of chili powder, the salty and deeply savoury umami of soy sauce, and the aromatic warmth of garlic, ginger, and onion. Compared to European flavours, it is similar in spiciness to Spanish Salsa Brava, but sweeter and more complex in depth than Portuguese piri-piri sauce. As a concentrated sauce, once cooked it blends with the natural umami of the fish to produce a well-balanced, rounded flavour.
This is a sterilised sauce. Before opening, store in a cool, dry place away from direct sunlight at room temperature. After opening, refrigerate and use as soon as possible. Please refer to the date printed on the product packaging for the exact best-before date. This product is not a fermented food and does not contain any probiotic ingredients — it is a standard cooking sauce.
