Ottogi Yetnal Dangmyeon is made from sweet potato starch and processed starch. It contains no wheat flour whatsoever, making it a completely different product from regular pasta or egg noodles. In its dried state, the noodle has a semi-transparent greyish appearance, but once cooked it becomes clear and smooth. The texture is chewy and springy, and it absorbs sauces and seasonings exceptionally well. Compared to Italian pasta, it feels much lighter and softer, with a distinctive slippery quality.

Ottogi Yetnal Dangmyeon is a pure carbohydrate-based food made from sweet potato starch. Per the EU label, both protein and fat are listed as 0.0g per 100g. This is an accurate figure reflecting the nature of sweet potato starch noodles and is not a labelling error. Dietary fibre is not separately listed on the current label. As Dangmyeon is primarily a carbohydrate energy source, we recommend pairing it with tofu, vegetables, or meat to obtain protein and fat in your meal.
Dried Dangmyeon should be stored in a cool, dry place away from direct sunlight. After opening, transfer to an airtight container or resealable bag to keep out moisture. Cooking is straightforward: boil in water for 6–8 minutes, then rinse under cold water. It is most commonly used in Japchae, a classic Korean dish made by stir-frying the noodles with vegetables and a soy sauce and sesame oil dressing. It can be easily recreated using ingredients available in European supermarkets, such as spinach, carrots, bell peppers, and mushrooms.
