While the original Shin Ramyun is known for its beef-broth-based spicy soup, this product captures the tangy, deep flavour of Kimchi through its seasoning powder and vegetable flakes. It consists of noodles (87%), seasoning powder (10%) and vegetable flakes (3%), with the flakes containing fermented napa cabbage Kimchi flakes, bok choy, carrot and spring onion. It can be prepared in approximately 4–5 minutes with boiling water alone.

It is one of Korea's most representative traditional fermented foods with thousands of years of history, and is central to Kimjang — the culture of preparing Kimchi — which was inscribed on the UNESCO Intangible Cultural Heritage list in 2013.

Please note, however, that this product (Shin Ramyun Kimchi) is an instant noodle. While the vegetable flakes contain naturally fermented Kimchi cabbage, the product as a whole is not classified as a fermented food or probiotic food. How spicy is this product? Will it suit European palates?

Shin Ramyun Kimchi is based on the Shin Ramyun brand, already well known for its bold spiciness among Korean instant noodles, with the added tangy and punchy flavour of Kimchi. European consumers who are not accustomed to spicy food may find the heat level quite intense. To reduce the spiciness, we recommend using slightly more water, or adding an egg or tofu to mellow the broth. Conversely, if you enjoy spicy food, adding fresh chilli or chilli oil will give you an even more intense, authentic Korean spice experience. If you are trying Korean instant noodles for the first time, start with a smaller amount of the seasoning powder to find your preferred heat level.
