Kimchi ferments naturally over days to weeks as lactobacillus bacteria multiply. During this process the sugars in the cabbage convert to lactic acid, creating the characteristic tangy flavour and deep umami, while the heat of the chilli weaves in to produce a complex, layered taste.

In accordance with EU food labelling regulations, the salt content declared on a dry weight basis is 5.3g per 100g. This is a high figure for a dry product. However, when prepared with water the actual sodium consumed per serving is lower due to dilution. Those monitoring their sodium intake are advised not to drink all of the broth, or to use only half of the soup powder. How is the Kimchi ingredient in this product made? Is it a fermented food?

The dried Kimchi flakes (cabbage, garlic, chilli) included in this product are made from naturally fermented napa cabbage Kimchi, prepared using traditional Korean methods and then dried. Like European Sauerkraut, aged cheese, or wine, Kimchi acquires its distinctive tangy, complex flavour through a natural fermentation process — making it one of Korea's most celebrated traditional fermented foods. However, this product as a whole is an instant ramyeon and is not classified as a fermented food in its entirety.
