Soju (燒酒) is a traditional Korean distilled spirit with approximately 700 years of history. Introduced to the Korean peninsula during the Goryeo Dynasty in the 13th century, it has since become an inseparable part of Korean food culture. Cheoeum Cheoreom is made by naturally fermenting Korean barley and rice, distilling the resulting alcohol, and then diluting it with soft alkaline-reduced water to achieve its signature smoothness.
The production process involves two stages. First, barley and rice are naturally fermented with yeast to produce alcohol, which is then distilled into pure neutral spirits. This is subsequently diluted with mineral-rich alkaline-reduced water down to 16% ABV, and a small amount of sweetener is added for a gentle finish. This process is what gives Cheoeum Cheoreom its distinctively clean and smooth flavour.
Just as European wine begins with the fermentation of grapes and whisky with the fermentation and distillation of barley, Soju follows the same fundamental principle of grain fermentation and distillation. Unlike whisky, however, it undergoes no oak barrel ageing — resulting in a clear, transparent spirit. At a gentler ABV than vodka, it harmonises exceptionally well with food.
