Imgane Kimchi Gochugaru is made from sun-dried Korean red peppers coarsely ground in the traditional Korean way, with 100% dried red pepper as the sole ingredient. Regular chili powder commonly found in Europe is typically a blend of multiple spices and tends to be sharply hot, whereas Korean Gochugaru is known for its vivid red colour, gentle natural sweetness, and fruity aroma with a moderate level of heat. Think of it as spicier than paprika powder but milder than cayenne pepper. It is an indispensable ingredient for achieving the authentic colour and flavour of Kimchi, Jjigae, and a wide range of Korean dishes.

It contains no gluten-containing ingredients and can also be used in a Gluten-Free diet. Imgane Kimchi Gochugaru sits at a medium heat level — the standard used in everyday Korean cooking. In terms of Scoville Heat Units, it falls in the range of approximately 1,000–2,000 SHU, making it stronger than Hungarian paprika but milder than jalapeño. If you are not used to spicy food, we recommend starting with about half the amount suggested in a recipe and gradually increasing to taste. The real appeal of this Gochugaru lies not just in its heat, but in the way its gentle sweetness and deep red colour come together.
Before opening, store in a cool, dry place away from direct sunlight. After opening, we strongly recommend transferring the contents to an airtight container and storing in the refrigerator or freezer. Refrigerated, it will retain its colour and aroma for approximately 6 months; frozen, it can keep for up to 1 year. As Gochugaru is sensitive to moisture and light, storing it in a glass airtight container will help maintain quality for longer. Since this is a large 1kg pack, dividing it into smaller portions for freezing is a convenient approach.
