Korean Gochugaru may look similar to the paprika powder commonly used in Europe, but the flavour and application are quite different. Paprika powder is mostly sweet with little to no heat, whereas Korean Gochugaru delivers a medium level of spice alongside a fruity natural sweetness and a distinctive deep umami character. The "fine grind (seasoning)" variety is milled to an exceptionally smooth consistency, so it disperses evenly in sauces, soups, and marinades, producing a vivid red colour. It is the ideal choice when you want to add both visual appeal and depth of flavour to a dish.
Korean Gochugaru is broadly divided into two types by particle size. "Fine grind (seasoning)" is milled as finely as flour, so it dissolves quickly into liquid sauces, jjigae stews, soups, and marinades, creating a smooth texture and uniform colour. "Coarse grind (Kimchi)" has larger flakes that cling to the surface of ingredients in dishes like Kimchi, where they are needed during the fermentation process. As Imgane Gochugaru is the seasoning-grade fine grind, it works best in sauce-based dishes such as Dakbokkeumtang (braised spicy chicken), jjigae stews, stir-fry sauces, dressings, and soups.
Korean Gochugaru typically measures around 1,000–4,000 SHU (Scoville Heat Units), which is comparable to or milder than a Mexican jalapeño (approximately 2,500–8,000 SHU). Rather than an intense, sharp heat, it is characterised by a gentle, warm spiciness. If you are not accustomed to spicy food, we recommend starting with about half the amount called for in a recipe and gradually increasing to taste. When frozen, the colour and aroma can be preserved for up to approximately one year. As this is a large 1 kg pack, a practical approach is to portion it out — keep a small amount in the refrigerator for regular use and store the rest in the freezer.
