Kim Jaban (Gim-jaban) is a traditional Korean rice side dish made from thin dried seaweed (laver) crumbled or broken into flakes and seasoned with oil and salt. This product is made with olive oil, giving it a nutty and light flavor. If you are familiar with European ingredients, think of it as a savory, flaky topping — similar to herb flakes sprinkled over bread — but served over rice. In Korea, it is a staple side dish enjoyed by children and adults alike at the breakfast table every day.
The most basic way is to sprinkle Kim Jaban over freshly cooked white rice (short-grain rice recommended) and mix it in with a spoon. Combined with rice, the nuttiness of the olive oil and the oceanic aroma of the seaweed come together for a simple yet deeply flavorful meal. You can also: ① use it as a filling or outer coating when making Jumeokbap (rice balls), ② sprinkle it over a fried egg, or ③ use it as a topping for tofu or avocado salad. Kim Jaban uses dried and processed seaweed rather than fresh seaweed, so there is no strong fishy smell.
