It has a distinctive yellow colour and is characterised by its sweet-tangy flavour and satisfying crunch. It is similar in category to European pickles or German sauerkraut in that it provides acidity, but unlike those products, Danmuji is made without any fermentation — it is produced by direct acidification (quick-pickling). It is primarily used as a filling inside Kimbap (Korean seaweed rice rolls), and is also enjoyed as a side dish (banchan) alongside Bibimbap and other Korean dishes. Its crisp texture adds a lively contrast to any meal.
