Yes, Hansung Gochugaru for Kimchi is made from 100% dried red chili pepper (Gochugaru) with no animal-derived ingredients whatsoever. It is therefore suitable for both vegans and vegetarians. It is also gluten-free. Please note that Halal certification has not been confirmed, so those requiring Halal certification are advised to verify before purchasing.
Korean Kimchi Gochugaru measures approximately 1,000–2,500 SHU on the Scoville scale, which is significantly milder than cayenne pepper (30,000–50,000 SHU) commonly used in Europe. The flavor is characterized by sweetness and fruity notes rather than intense heat, making it accessible even for Europeans trying Korean food for the first time. That said, individual spice tolerance varies, so we recommend starting with about half the suggested amount in a recipe and adjusting to your personal preference.
Gochugaru is sensitive to moisture, direct sunlight, and high temperatures. After opening, transfer to an airtight container and store in a cool, dark place, or refrigerate or freeze for best results. Freezing preserves both color and aroma the longest. Since this is a large 2.5kg pack, we recommend portioning it out — keep the amount you plan to use soon in the refrigerator and store the rest in the freezer.
