Modeum Kong-jorim (Assorted Braised Beans) is a traditional Korean banchan (side dish) made by slowly simmering a variety of beans — such as black beans, quail beans, and green peas — in a seasoning of soy sauce, sugar, and sesame oil until almost all the liquid has been absorbed. It is characterized by a sweet yet savory flavor, with a glossy and pleasantly chewy texture. As a European comparison, the technique is somewhat similar to a French confit — slowly cooking ingredients to concentrate their flavor. In Korea, it is served as banchan, a rice accompaniment, much like the European side dish culture where multiple small dishes are placed on the table together. Its sweet and nutty flavor makes it one of the most approachable Korean dishes for first-time European tasters.
The vegan and vegetarian suitability of this product has not been officially confirmed at this time. Typical Kong-jorim recipes use soy sauce, which contains soy (soybeans). This product is delivered frozen and must be placed in the freezer (−18°C or below) immediately upon receipt. Two thawing methods are recommended: ① Refrigerator thawing — Transfer from the freezer to the refrigerator (below 4°C) and thaw slowly over 8–12 hours. This is the safest method. ② Quick thawing — Submerge the sealed package in cold water for 30–40 minutes. Microwave thawing is also possible but may affect texture. ⚠️ Important: Never refreeze the product once it has been thawed. After thawing, keep refrigerated and consume as soon as possible (ideally the same day, within 24 hours). Always check the product packaging for the exact shelf life after thawing and the best-before date.
In Korea, Kong-jorim is traditionally enjoyed as a banchan (side dish) alongside warm steamed rice. Spooning a small amount of braised beans onto each bite of rice brings out a wonderful balance of sweet-savory flavor against the mild, clean taste of the rice. However, it can also be enjoyed in many ways without rice: try it as a salad topping, serve it alongside bread, or use it as a protein topping on pasta or a quinoa bowl. It tastes great both warm and at room temperature (once fully thawed). Serving it in small bowls alongside other banchan in the Korean Hansang (full table spread) style is something you can easily recreate at home in Europe.

When you first open the package, divide it into single-serving portions using zip-lock bags or airtight containers and store in the freezer for convenient use. Once thawed, do not refreeze — keep refrigerated and consume promptly.
