Traditional Korean Fermentation

Doenjang, the heart of Ssamjang, is a traditional fermented food that has been part of Korean culture for hundreds of years. Cooked soybeans are mashed and shaped into blocks called Meju, then tied with straw and left to naturally ferment in a warm place. They are then submerged in brine and slowly aged through the four seasons — during this time, the proteins in the soybeans break down, developing a deep and complex umami flavour.

Haechandle Four Seasons Ssamjang uses this traditional Doenjang as its base (53%), with barley koji cultures guiding the fermentation of the soybeans. Korean chilli seasoning, roasted soybean powder, garlic, and onion are then added to create a ready-to-use seasoning paste that needs nothing more than a spoonful straight from the jar to the table.

To draw a comparison familiar to European palates, Doenjang belongs in the same category as Italian Parmigiano Reggiano or German Sauerkraut — a natural depth of flavour created by time and microorganisms, captured in every spoonful.

Korean Ways to Enjoy · Authentic Serving Ideas

Authentic Korean dishes enjoyed with Ssamjang in Korean households — experience the true flavours of the Korean table, not Western adaptations.

Ssam
The dish that gives Ssamjang its name, and its most iconic use. Place a piece of grilled meat on a fresh leaf of lettuce, perilla, or cabbage, add a small dab of Ssamjang, wrap it up and eat in one bite. An indispensable tradition at Korean family tables and Korean barbecue restaurants alike.
Samgyeopsal
삼겹살
Thick slices of pork belly grilled and eaten as a lettuce wrap (Ssam) with a slice of garlic and Ssamjang — one of Korea's most beloved dishes. The deep fermented flavour of Ssamjang perfectly balances the richness of the pork fat, making it one of the most popular dining-out experiences in Korea.
Bibimbap
비빔밥
Adding a spoonful of Ssamjang to Bibimbap — rice topped with seasoned vegetables and egg — brings a savoury, earthy depth quite different from Gochujang. It is also an excellent substitute for Gochujang when you prefer less heat.
Bossam
보쌈
Thinly sliced boiled pork wrapped with cabbage leaves and Kimchi, Bossam is a staple of Korean celebratory spreads. A touch of Ssamjang alongside the tender pork adds a salty, deeply flavoured finish.
Bulgogi-Ssam
불고기 쌈
Sweet and savoury Bulgogi placed on a lettuce leaf with a spoonful of rice and Ssamjang, then wrapped and eaten together. The sweetness of the marinated beef and the fermented saltiness of Ssamjang create a perfectly balanced bite — a classic of Korean home cooking.
Yachae & Ssamjang
생채소 디핑
In Korea, raw vegetable sticks such as cucumber, carrot, and green chilli are often dipped directly into Ssamjang. Enjoyed as a light side dish before a meal or as a snack, this is the most direct way to experience the full flavour of this fermented seasoning paste.

Frequently Asked Questions (FAQ)
What is Ssamjang and what does it taste like?

Ssamjang is a traditional Korean fermented seasoning sauce — a thick paste made by blending naturally fermented soybean paste (Doenjang) with chilli seasoning. The flavour is salty and intensely savoury (umami), with a mild heat and a nutty, roasted depth. Much like aged cheese or miso in European fermented food culture, the fermentation process creates a complex and richly layered taste. This product is particularly notable for its roasted peanut powder and roasted soybean powder, which add a distinctive nutty character. It is primarily used as the key sauce in Ssam — the Korean tradition of wrapping grilled meat and rice in fresh vegetable leaves.

Does this product contain any allergens?

Yes, this product contains allergens that must be declared under EU food labelling regulations (Regulation (EU) 1169/2011). ① Gluten: The Doenjang base contains wheat flour and wheat koji (including barley). Those with gluten sensitivity or coeliac disease should avoid this product. ② Peanuts: Roasted peanut powder is included in the ingredients. Those with a peanut allergy must not consume this product. ③ Soybeans: Soybean is the primary ingredient of Doenjang. Additionally, this product contains alcohol as an ingredient, making it unsuitable for those who must avoid alcohol. Regarding sesame (Sesame) allergy, manufacturer confirmation is currently required — if you have a sesame allergy, please contact the manufacturer before purchasing.

Is this product suitable for vegans or vegetarians? Is it Halal certified?

This product is not suitable for a vegan diet, as it contains ingredients of animal origin. Suitability for vegetarians has not been confirmed — those following a strict vegetarian diet should carefully review the ingredient list before purchasing. This product is also not Halal certified, and contains alcohol as an ingredient, making it unsuitable for a Halal diet. It is likewise not suitable for a gluten-free diet.

I heard the sodium content is high — how much should I use?

That is correct. This product contains 7.1g of salt per 100g, which is very high. This is because Ssamjang is not a staple food but a condiment or dipping sauce used in small amounts — much like anchovy paste or a concentrated fermented paste in European cuisine, a little goes a long way. The recommended serving size is approximately half a teaspoon (around 5g), which is sufficient to deliver full flavour. Those managing sodium intake, with high blood pressure, or following a low-sodium diet should take care with portion sizes.

How should I store it after opening, and how long will it keep?

Before opening, store in a cool, dry place at room temperature. After opening, always close the lid securely and refrigerate (below 4°C). Use as soon as possible after opening, and always use a clean spoon each time to prevent contamination. As Ssamjang is based on fermented ingredients, it retains its quality for a relatively long time when refrigerated — however, always check the 'Best before' date on the product label for the exact shelf life. Please note that this product is not a probiotic product containing live cultures; it is a seasoning sauce made using traditionally fermented ingredients.
