Almost no heat, making it easy to enjoy even for those not accustomed to spicy food. The deep umami of naturally fermented Korean soy sauce and the aroma of sesame oil are at the heart of the flavour.

Korean Heritage — Japchae and Mandu

Japchae is a festive Korean dish with roots in the royal banquets of the Joseon Dynasty, approximately 400 years ago. The name combines the characters for "mixed" (雜) and "vegetables" (菜) — true to its name, it brings together a variety of vegetables and chewy glass noodles made from sweet potato starch, all stir-fried together. In Korean households, Japchae is an indispensable dish at weddings, national holidays and birthdays — regarded not as everyday fare but as food for celebratory occasions.

Mandu is a traditional Korean food made by wrapping a filling inside a thin wheat dough wrapper, then steaming, pan-frying or boiling it. It belongs to the same family as Italian ravioli, Polish pierogi and German Maultaschen — yet Korean Mandu has its own distinctive character, defined by the aroma of sesame oil and naturally fermented soy sauce. This product is a creative combination of these two Korean traditions — Japchae and Mandu — brought together in a single bite.

The depth of naturally fermented Korean soy sauce — The key to the flavour of the filling is the soy sauce. Korean soy sauce is made by naturally fermenting soybeans and wheat, then ageing the mixture over several months. Just as European cheese develops complex flavour through fermentation and ageing, Korean fermented soy sauce acquires an umami depth that goes far beyond simple saltiness. This traditional fermented soy sauce is used in the filling of these Mandu, delivering a rich, full-bodied flavour with no animal ingredients whatsoever.

Korean Serving Suggestions · Recetas Coreanas

Discover the many authentic ways Korean families enjoy Mandu — experience the flavour exactly as it is served in Korea.

Jjin-mandu
찐만두
The most classic way to cook Mandu in Korea. Place the dumplings in a steamer basket over boiling water and steam for 8–10 minutes until the wrapper becomes soft and moist, allowing the Japchae filling to shine through. Serve with a dipping sauce of soy sauce, rice vinegar and a pinch of chilli flakes.
Gun-mandu
군만두
Add a little oil to a pan, place the Mandu in, pour in 50 ml of water, cover with a lid and cook for 5–6 minutes, then remove the lid and pan-fry until the base is crispy. This Korean-style pan-fried Mandu — Gun-mandu — is the most popular preparation at Korean street food stalls and in home kitchens alike.
Mandu-guk
만두국
A traditional dish served at Korean New Year (Seollal). Simmer Mandu in vegetable broth, then finish with crumbled dried seaweed, egg strips (omit for vegan) or finely sliced spring onion. In Korea, eating a bowl of Mandu-guk on New Year's Day is said to add a year to your age.
Tteok-mandu-guk
떡만두국
A festive soup made by adding Korean rice cakes (tteok) to Mandu-guk. The chewy rice cakes and Japchae Mandu together make a hearty, satisfying meal. One of the most beloved soups prepared in Korean households on New Year's morning.
Mandu-jeongol
만두전골
A Korean hot pot dish prepared by arranging vegetable broth, Mandu, Kimchi, tofu, mushrooms, spring onion and crown daisy in a large pot and simmering together at the table. Because it is cooked communally in the centre of the table, it is a favourite for family gatherings and dinner parties.
Ramyeon Topping
라면 토핑
Adding Mandu to a pot of Ramyeon (Korean instant noodles) while it cooks is a very common practice in Korea. Drop 2–3 pieces into the broth just as it begins to boil and cook together — the noodle broth absorbs the Japchae flavour from the filling, making it even richer. Serve alongside Kimchi for a fully authentic Korean experience.

Frequently Asked Questions (FAQ)
What is Japchae Mandu? An introduction for first-timers.

Japchae Mandu combines two traditional Korean dishes in one. "Mandu" is a Korean-style dumpling made from a thin wheat dough wrapper, while "Japchae" is a classic Korean dish of semi-transparent glass noodles made from sweet potato starch, stir-fried with a variety of vegetables and seasoned with sesame oil and soy sauce. This product takes that Japchae filling and encloses it inside a Mandu wrapper to create a convenient frozen meal. The filling contains 31% vegetables — including cabbage, onion, carrot, spring onion, king oyster mushroom, wood ear mushroom and shiitake — plus 4% glass noodles, all seasoned with soy sauce and sesame oil for a deep, rich umami flavour. The concept is similar to Italian ravioli or Polish pierogi, but with the distinctive character of Korean spices and naturally fermented soy sauce.

Is this product fully vegan? Is it suitable for vegetarians?

Yes, this product is suitable for both vegan and vegetarian diets. No animal-derived ingredients (meat, fish, eggs or dairy) are used. Textured soy protein is used to achieve a satisfying, meaty texture using only plant-based ingredients. Please note that the soy sauce ingredient contains a small amount of alcohol, and the product contains wheat flour, wheat gluten and wheat dietary fibre — it is therefore not gluten-free. The product also does not carry halal certification.

Which allergens does this product contain?

Under EU food labelling regulations (Regulation 1169/2011), the following three allergens must be noted: ① Gluten — wheat flour, wheat gluten and wheat dietary fibre are all present. Do not consume if you have coeliac disease or a wheat allergy. ② Soybeans — present in the soy sauce and textured soy protein. ③ Sesame — present in the sesame oil. Please take care if you have a sesame allergy. All three allergens are among the 14 mandatory declarable allergens under EU legislation.

Does this product contain fermented ingredients? What does it taste like?

The product itself is a frozen convenience food and is not a fermented food as a whole. However, the soy sauce used in the filling is naturally fermented in the traditional manner, contributing a deep and complex umami flavour. Just as European cheese and wine develop intricate flavour profiles through ageing and fermentation, Korean soy sauce is a condiment made by naturally fermenting soybeans and wheat using traditional methods. Thanks to this naturally fermented soy sauce, the Mandu delivers a rich, full-bodied flavour despite containing only vegetables. The overall taste is savoury with a gentle sweetness, complemented by the nutty fragrance of sesame oil and the earthiness of mushrooms. There is virtually no heat, making it accessible even for those who do not enjoy spicy food. Please also note that the soy sauce ingredient contains a small amount of alcohol.

How should I cook and store these dumplings?

[Storage] Keep frozen at -18°C or below. Do not refreeze once thawed. After opening, seal any remaining dumplings and return to the freezer; consume as soon as possible. [Cooking — Pan-fry (recommended)] Place the frozen dumplings flat-side down in an oiled pan over medium-high heat and cook for 3–4 minutes until the base is golden. Add 3–4 tablespoons of water, cover with a lid and steam for 6–7 minutes, then remove the lid and cook off any remaining moisture until the base is crispy. [Cooking — Air fryer] 180°C for approximately 12–15 minutes, turning once halfway through. [Cooking — Boiling] Drop into boiling water and cook for 2–3 minutes after the dumplings float to the surface. Serve with a soy dipping sauce or sriracha.
