Pyeongyang Naengmyeon noodles are used in traditional Korean cold noodle dishes. "Sari" is a Korean term meaning a bundle or portion of noodles, and this product is a fresh noodle format stored frozen before cooking. Made from a blend of wheat flour and buckwheat flour, the noodles are darker in colour than regular wheat pasta and have a distinctive nutty flavour. Unlike instant noodles, which are deep-fried or dried, these noodles are boiled and rinsed in cold water before being served chilled — the traditional method. The texture is chewy yet smooth, similar in category to Japanese soba (buckwheat noodles) but made with a uniquely Korean blend and preparation method. They are primarily enjoyed as a refreshing cold meal, served with a chilled broth or sauce.
This product contains wheat (gluten) and is therefore not suitable for people with gluten intolerance (including coeliac disease) or wheat allergy. This product also contains buckwheat flour. While buckwheat is not included in the EU's list of 14 mandatory allergens, it can cause serious allergic reactions in some individuals with buckwheat allergy, so caution is advised. This product must be stored frozen at −18°C or below. We recommend thawing slowly in the refrigerator (at 4°C or below) or by submerging the sealed package in cold water. Do not refreeze once thawed. Refreezing poses a food safety risk and will significantly deteriorate the texture of the noodles. Once thawed, it is best to cook and consume the noodles on the same day. Any remaining noodles after opening should be stored in an airtight container in the refrigerator and used within 24 hours.
Pyeongyang Naengmyeon is renowned even among Korean cold noodle dishes for its particularly clean and understated flavour. Rather than being spicy or pungent, it is characterised by a gentle umami depth and the distinctive nutty, slightly earthy aroma of buckwheat. Compared to European food, it is most similar to Japanese soba served cold, but differs in that it is eaten with a Korean-style broth or a soy sauce and vinegar-based dressing. The noodles themselves are lighter and easier to digest than Italian pasta. For European consumers trying it for the first time, thinking of it as a cold noodle salad is a helpful way to approach it — it is very well suited as a light, refreshing summer meal served with fresh toppings such as cucumber, radish and boiled egg.
