Ingredients

Wheat flour, buckwheat flour (including roasted buckwheat flour), starch (potato starch or sweet potato starch), refined salt, purified water.

A portion of the buckwheat flour is used in roasted form to enhance the aroma and texture of the buckwheat. This gives the noodles the characteristic nutty depth of flavour found in authentic Pyeongyang-style noodles.

How Koreans Enjoy It · Korean Serving Styles

The many ways Korean households and long-established restaurants enjoy Pyeongyang Naengmyeon noodles — experience the authentic taste as it is meant to be.

Mul Naengmyeon
물냉면
The most traditional form of Pyeongyang Naengmyeon. Cooked noodles are served in a cold dongchimi (radish water kimchi) broth or beef broth, topped with a boiled egg, julienned cucumber, pear slices and sliced boiled beef. Koreans describe it as "subtly simple yet deeply flavoured" — a clean, non-pungent style that showcases the noodle's natural character.
Bibim Naengmyeon
비빔냉면
A broth-free style where the noodles are tossed in a spicy-sweet sauce made from Gochujang, vinegar and sugar. More popular among those who enjoy bold, spicy flavours in Korea, it is typically served with a boiled egg and julienned cucumber for a cool yet intense eating experience.
Hoe Naengmyeon
회냉면
Inspired by the Hamheung style of Korea's east coast, this variation features spicy-tangy marinated raw skate or pollock placed on top of the noodles. The combination of chewy noodles and the springy, seasoned raw fish topping is the defining characteristic of this dish.
Naengmyeon with Bulgogi
불고기 후식 냉면
A classic combination commonly found at Korean barbecue restaurants. After enjoying richly marinated Bulgogi, a bowl of cold Mul Naengmyeon is ordered as a palate-cleansing finish. It refreshes the palate after the richness of grilled meat and is an indispensable part of Korean dining culture.
Yeolmu Naengmyeon
열무냉면
A summer home-style dish where the noodles are served in the cool, lightly tangy broth of yeolmu Kimchi (kimchi made from young radish leaves). The slightly ripened, sour notes of the kimchi broth pair beautifully with the buckwheat noodles, making this one of the most commonly prepared styles in Korean households.
Janchi Guksu Style
잔치국수 스타일 활용
If traditional Pyeongyang Naengmyeon feels unfamiliar, try blanching the noodles and serving them in a warm anchovy broth, topped with crumbled seaweed, egg strips and sautéed zucchini for a Korean-style warm noodle dish. The buckwheat aroma adds a depth of flavour that sets it apart from ordinary thin wheat noodles.

Cooking Instructions · How to Cook

1. Thawing
Separate the frozen noodles into individual portions (approx. 200g each). They can be placed directly into boiling water without prior thawing.
2. Boiling
Add the noodles to a generous amount of boiling water and cook for approximately 40–60 seconds. The noodles are ready when they loosen and float to the surface.
3. Rinsing
Immediately transfer to cold running water and rinse thoroughly, rubbing the noodles between your hands. Removing the excess starch well and then briefly submerging in ice water will bring out the best chewy texture.
4. Serving
Pour cold broth over the noodles for Mul Naengmyeon, or toss with a seasoning sauce for Bibim Naengmyeon.

Frequently Asked Questions (FAQ)
What is Pyeongyang Naengmyeon and how is it different from regular pasta or instant noodles?

Pyeongyang Naengmyeon noodles are used in traditional Korean cold noodle dishes. "Sari" is a Korean term meaning a bundle or portion of noodles, and this product is a fresh noodle format stored frozen before cooking. Made from a blend of wheat flour and buckwheat flour, the noodles are darker in colour than regular wheat pasta and have a distinctive nutty flavour. Unlike instant noodles, which are deep-fried or dried, these noodles are boiled and rinsed in cold water before being served chilled — the traditional method. The texture is chewy yet smooth, similar in category to Japanese soba (buckwheat noodles) but made with a uniquely Korean blend and preparation method. They are primarily enjoyed as a refreshing cold meal, served with a chilled broth or sauce.

Does this product contain allergens? Is it suitable for people with gluten intolerance?

This product contains wheat (gluten) and is therefore not suitable for people with gluten intolerance (including coeliac disease) or wheat allergy. This product also contains buckwheat flour. While buckwheat is not included in the EU's list of 14 mandatory allergens, it can cause serious allergic reactions in some individuals with buckwheat allergy, so caution is advised. Cross-contamination with other allergens such as soy, sesame and sulphites has not been fully confirmed through official manufacturer documentation at this time. If you have a specific allergy, please check the official label on the product packaging before purchase or contact the dotAsia customer service team.

Is this product suitable for a vegan or vegetarian diet?

The suitability of this product for vegan or vegetarian diets has not been officially confirmed at this time. Looking at the noodle ingredients alone (wheat flour, buckwheat flour, starch, salt, water), they appear to consist entirely of plant-based ingredients; however, cross-contamination during manufacturing or the presence of additional ingredients has not been fully verified through official documentation. If you follow a strict vegan or vegetarian diet, we recommend contacting the dotAsia customer service team for the latest manufacturer information before purchasing.

How should I store this frozen product, and how quickly should I use it after thawing?

This product must be stored frozen at −18°C or below. We recommend thawing slowly in the refrigerator (at 4°C or below) or by submerging the sealed package in cold water. Do not refreeze once thawed. Refreezing poses a food safety risk and will significantly deteriorate the texture of the noodles. Once thawed, it is best to cook and consume the noodles on the same day. Any remaining noodles after opening should be stored in an airtight container in the refrigerator and used within 24 hours.

What does Pyeongyang Naengmyeon taste like? How does it compare to European food?

Pyeongyang Naengmyeon is renowned even among Korean cold noodle dishes for its particularly clean and understated flavour. Rather than being spicy or pungent, it is characterised by a gentle umami depth and the distinctive nutty, slightly earthy aroma of buckwheat. Compared to European food, it is most similar to Japanese soba served cold, but differs in that it is eaten with a Korean-style broth or a soy sauce and vinegar-based dressing. The noodles themselves are lighter and easier to digest than Italian pasta. For European consumers trying it for the first time, thinking of it as a cold noodle salad is a helpful way to approach it — it is very well suited as a light, refreshing summer meal served with fresh toppings such as cucumber, radish and boiled egg.
