Hamheung Bibim Naengmyeon is a cold noodle dish originating from the Hamheung region of northern Korea. It is an entirely different dish from Japanese ramen (hot broth noodles) or soba (buckwheat noodles). There are two defining characteristics. First, the word "Bibim" means "to mix" in Korean — the noodles are served without broth and tossed directly with a spicy-sweet-tangy gochujang-based sauce called bibimjang. Second, the noodles have an exceptionally chewy and firm texture, owing to the use of sweet potato or potato starch. The chewiness is noticeably more pronounced than al dente pasta, which can feel quite unique to first-time tasters. As a cold dish, it is especially popular during the summer months.
The bibimjang sauce in Hamheung Bibim Naengmyeon is gochujang-based, delivering a complex flavour that is spicy, tangy, and sweet all at once. Spice tolerance varies by individual, but by Korean food standards it sits at a medium heat level. Those unaccustomed to spicy food may find it quite intense at first. To reduce the heat, add the sauce gradually rather than all at once, or balance it with a small amount of vinegar or sugar. For those who prefer a stronger kick, a pinch of gochugaru (Korean chilli flakes) or a drizzle of sesame oil can be added.
