Yeolmu Kimchi begins by thoroughly washing young radishes — leaves, stems and all — before salting them in sea salt. Once the vegetables have released their moisture, they are combined with a seasoning paste of garlic, ginger, green onion, red pepper powder, pear puree and fermented anchovy sauce, then packed tightly into sealed containers to ferment naturally in the traditional Korean manner.

During this process, lactic acid bacteria naturally present on the vegetables become active. For consistent flavour, Bibigo additionally uses a starter culture carried in hydrolysed soy protein. Fermentation proceeds slowly over several days at low temperature, gradually developing a gentle acidity and deep umami character. The fermented anchovy sauce is itself a separately fermented ingredient, lending a double layer of fermented complexity to the finished kimchi.
