Traditional Korean Fermentation

Ssamjang is a blended sauce made from Korea's two oldest fermented condiments: Doenjang (fermented soybean paste) and Gochujang (fermented red pepper paste). In this product, fermented soybean paste accounts for 53% of the total, placing fermented flavour firmly at the heart of the recipe.

Both Doenjang and Gochujang are naturally fermented using Koji, a traditional mould culture. As Koji grows on cooked soybeans and grains, proteins are slowly broken down, producing glutamic acid and a wealth of umami compounds. Over time, the colour deepens and the aroma grows more complex. In Korea, this process has traditionally been carried out over many months, passing through all four seasons.

The principle is familiar to European palates. Just as cheese gains its deep flavour by fermenting milk proteins, and wine develops its complex aroma by fermenting grape juice, Korean fermented condiments are the natural result of time and culture working together. Like sauerkraut or miso, Ssamjang is an everyday fermented food found in Korean households.

How to Use Korean Style · Recetas Coreanas

The most popular ways to enjoy Bibigo Ssamjang in Korean households — experience the authentic flavours of the Korean table.

Samgyeopsal Ssam
삼겹살 쌈
The most classic way to enjoy Ssamjang. Place grilled Samgyeopsal (pork belly) on a lettuce or perilla leaf, add a slice of garlic and a dollop of Ssamjang, then wrap it up into a single bite. This is one of the most iconic scenes at a Korean dining table shared among family and friends.
Bossam
보쌈
A traditional Korean dish of tender pork belly simmered with aromatic spices, served with salted cabbage leaves, Kimchi, and radish salad, dipped in Ssamjang. The fermented depth of Ssamjang pairs perfectly with the mild, delicate flavour of the boiled pork.
Bulgogi Ssam
불고기 쌈
Thinly sliced beef marinated in soy sauce and grilled — Bulgogi — is placed on a lettuce leaf with a light spread of Ssamjang and wrapped up. The sweet-savoury Bulgogi is elevated by the salty, umami-rich Ssamjang, creating a deeper, more rounded flavour.
Vegetable Dip
생채소 쌈
In Korean households, fresh vegetables such as cucumber, carrot, and green chilli are simply dipped straight into Ssamjang. It works equally well as a rice side dish or a light snack. The simplest way to add bold fermented flavour to a vegetarian meal.
Bibimbap
비빔밥
Korea's iconic mixed rice bowl, topped with assorted seasoned vegetables, meat, and egg. Swap out Gochujang for a spoonful of Ssamjang and you get a Bibimbap with a softer, more rounded flavour and a deeper fermented character.
Jeyuk Bokkeum
제육볶음
Spicy stir-fried pork — Jeyuk Bokkeum — wrapped in lettuce with a touch of Ssamjang creates a perfect balance between the heat of the dish and the firm, savoury depth of the fermented sauce. A classic Korean home-cooked meal, best enjoyed with steamed white rice.

Frequently Asked Questions (FAQ)
What is Ssamjang and how do you eat it?

Ssamjang is a traditional Korean fermented sauce made by blending fermented Doenjang (soybean paste) and Gochujang (red pepper paste) with garlic, sesame oil, sesame seeds, and other seasonings. In Korea, it is most commonly enjoyed in the style known as "Ssam" — wrapping rice and grilled meat in a leaf of lettuce or perilla, then adding a dollop of Ssamjang. Its distinctively savoury, nutty, and mildly spicy flavour pairs beautifully with plain vegetables or grilled meat. It also works wonderfully as a dip for fresh vegetables such as cucumber, carrot, or celery. Bibigo Tube Ssamjang comes in a convenient tube package so you can squeeze out exactly as much as you need.

Is this product suitable for vegetarians? What about vegans?

Bibigo Tube Ssamjang is suitable for vegetarians. It contains no meat or fish ingredients. However, it is not suitable for vegans. The product contains distilled alcohol, which some strict vegan standards do not permit when derived from grain fermentation. It also contains flavour enhancers E627 (disodium guanylate) and E631 (disodium inosinate), which may be of animal or yeast origin and should be noted by strict vegan consumers. Therefore, this product is classified as: Vegetarian ✅ Suitable / Vegan ❌ Not suitable.

I have allergies — which allergens does this product contain?

Bibigo Tube Ssamjang contains the following three allergens from the EU's 14 mandatory allergen categories: Gluten — Wheat is present in both the fermented soybean paste base and the red pepper paste component. This product is therefore not gluten-free. Soybeans — Soybean is the primary ingredient of the fermented soybean paste. Sesame — Present in the red pepper paste base and in the form of sesame oil. Additionally, the EU export label carries a warning regarding possible cross-contamination with Crustaceans and Molluscs. Consumers with these allergies should take care before consuming.

Ssamjang is described as a fermented food — what does fermentation mean and how does it affect the flavour?

Fermentation is a natural process in which microorganisms break down components in food, creating distinctive flavours and complex taste profiles. Just as European cheese and wine develop deep flavour through ageing, Korean Ssamjang acquires its rich umami character through traditional Korean fermentation methods over time. The fermented soybean paste (Doenjang) that forms the base of Bibigo Ssamjang is made using a naturally fermented process: as Koji culture grows on soybeans, proteins are broken down to form glutamic acid and other compounds that create a deep, complex savoury flavour. The result is a unique taste profile that balances saltiness, nuttiness, a hint of sweetness, and mild heat. Please note that this product also contains distilled alcohol; those following an alcohol-free diet should be aware of this.

How should I store it after opening, and how long can I use it?

Before opening, store Bibigo Tube Ssamjang in a cool, dry place. After opening, refrigerate immediately, wipe the tip of the tube clean, and close the cap tightly. We recommend using the product within the period indicated by the manufacturer (please check the best-before date and post-opening usage period on the packaging). The tube format minimises air contact, helping to preserve freshness for longer. As with all fermented foods, refrigeration after opening helps maintain the flavour at its best.
