Mumallaengi is a dried vegetable made from Korean white radish (similar to daikon), thinly sliced or cut into strips and dehydrated by sun-drying or using a food dryer. In Korean, "mu" means radish and "mallaengi" means dried. The drying process concentrates the radish's natural sweetness and umami, resulting in a uniquely chewy and slightly firm texture. Think of it like sun-dried tomatoes in European cuisine — a fresh vegetable transformed through drying to intensify its flavour. It is most commonly seasoned and served as a Korean banchan (side dish), or added to soups and stews.
As the moisture is removed during drying, the radish's sweetness and umami become more pronounced. The flavour is mild and gently sweet, pairing well with soy sauce or gochugaru (Korean red pepper flakes) seasonings. The texture is chewy with a satisfying bite — similar to rehydrated dried mushrooms or sun-dried vegetables. Once soaked in water before cooking, it softens while retaining its chew, and absorbs sauces and seasonings exceptionally well.
Sulphites (SO2) are sometimes used in the processing of dried vegetables to preserve colour and freshness. Sulphites are one of the 14 mandatory allergens under EU food law and may trigger respiratory reactions in sensitive individuals. This product is sold frozen. Keep it frozen (-18°C or below) until ready to use. For safe thawing, place it in the refrigerator (approx. 4°C) and allow it to thaw slowly. Rapid thawing at room temperature is not recommended. ⚠️ Important: Never refreeze a product that has already been thawed. Refreezing can compromise food safety and significantly reduce quality. Once thawed, store in the refrigerator and use within 2 days.
The main ingredient of this product has been confirmed as Korean radish (mu) only. However, its suitability for vegans or vegetarians has not been officially certified. As the manufacturer has not formally confirmed whether any animal-derived substances are used during processing, those following a strict vegan or vegetarian diet are advised to contact the manufacturer directly or check the product label before purchasing.
