Sempio Somyeon is a traditional Korean thin wheat noodle. The name literally means "thin (so) noodle (myeon)" and the recipe is remarkably simple: 97.5% wheat flour and salt. While similar in thickness to Italian vermicelli or capellini, Korean Somyeon has a distinctly smoother and springier texture. This is achieved through a vacuum-kneading and resting process — a physical technique in which the dough is kneaded and rested under vacuum pressure to create a denser, more refined structure (this is a physical resting method, not a fermentation process). The result is a noodle that holds its shape beautifully in hot broths and cold mixed dishes alike.
Yes, Sempio Somyeon is fully suitable for both vegan and vegetarian diets. The ingredient list contains only two items — wheat flour (97.5%) and salt — with no animal-derived ingredients whatsoever. Pair it with vegan-friendly sauces such as soy sauce-based dressings or sesame paste for a completely plant-based meal.
Sempio Somyeon contains Gluten, one of the 14 major allergens required to be declared under EU food labelling law (Regulation 1169/2011). As the primary ingredient is wheat flour, this product is not suitable for individuals with a wheat allergy or coeliac disease. It is not a gluten-free product. No other major allergens — including dairy, tree nuts, eggs, or soy — are present in the ingredients list. Cooking Somyeon is straightforward. Bring a generous amount of water to a rolling boil, add the noodles, and cook for approximately 3–4 minutes. Because the noodles are very thin, overcooking will cause them to become soft and lose their texture, so keep a close eye on the time. Once cooked, rinse immediately under cold running water to remove excess starch — this keeps the noodles firm and springy. Please note that this product contains approximately 3g of salt per 100g, which is relatively high; if using salty sauces or adding extra seasoning, be mindful of your overall sodium intake. Somyeon works equally well in hot Korean-style broths (Janchi-guksu style) and cold mixed noodle dishes.
Sempio Somyeon is a dried noodle product. Before opening, store in a cool, dry place away from direct sunlight. After opening, transfer the noodles to an airtight container or resealable bag to prevent moisture absorption, and use as soon as possible. As a dried product, Somyeon has a relatively long shelf life when stored correctly — please refer to the best-before date printed on the packaging for the exact expiry.
