Traditional Korean Fermentation · How Gochujang Is Made

True to tradition. Gochujang is a fermented condiment that has been crafted in Korean homes and temples for hundreds of years. Cooked rice is blended with meju powder (fermented soybean powder), sun-dried red pepper powder, and sea salt, then packed into large earthenware jars and left to slowly mature through the changing temperatures of all four seasons. Since its founding in 1946, Sempio has been Korea's leading jang (fermented paste) brand, bringing this traditional fermentation method to a wider scale.

The science of fermentation. The deep flavour of Gochujang is created by Koji (nuruk) cultures. The carbohydrates in rice are slowly broken down into sugars, producing a natural sweetness, while soybean proteins are simultaneously converted into amino acids, generating a powerful umami character. Although Gochujang has a naturally high preservative capacity as a fermented food, avoid prolonged exposure of the surface to air after each use. Always use a clean spoon to help keep it fresh for longer.
