Authentic Korean Royal Court Cooking Sauce · Sempio Royal Galbi-jjim Sauce
Galbi-jjim is a classic Korean royal court dish that once graced the banquet tables of the Joseon Dynasty — beef short ribs slowly braised in a soy sauce-based marinade until deeply flavourful and tender. This sauce is built on naturally fermented brewed soy sauce (35%), blended with garlic, ginger, kiwi and pineapple purée to deliver rich umami depth and a gentle natural sweetness. Recreate the authentic taste enjoyed by Korean families on festive occasions and special gatherings — all from a single bottle.
Soy sauce 35% (water, wheat, soybean, salt), water 16.5%, sugar 15%, starch syrup 10%, garlic 6%, seasoned rice wine 3.37%, kiwi purée 3.3%, pineapple purée 3.3%, ginger 2.5%, wheat extract 2%, salt 1%, sesame oil 0.9%, black pepper powder 0.5%, soybean peptide concentrate 0.3%, xanthan gum 0.2%, disodium inosinate 0.05%, disodium guanylate 0.04%, caramel colour 0.03%, capsicum oleoresin 0.01%.
At the heart of this sauce is naturally brewed soy sauce (Yangjo Ganjang), which makes up 35% of the total ingredients. In Korea, soy sauce is a traditional seasoning crafted by fermenting soybeans, wheat, salt and clean water together — naturally aged for anywhere from several months to over a year, developing a profound depth of flavour. Sempio, founded in 1946, is Korea's longest-established fermented sauce brand and a name that has been a staple of Korean family cooking for generations.
The fermentation process breaks down soy proteins through natural enzymes, generating glutamic acid and other umami compounds in abundance. This deep flavour — shaped by time, temperature and the turning of the seasons — is the essence of Korean food culture, something no artificial seasoning can replicate.
To draw a parallel with European food traditions: just as Italian Parmigiano Reggiano develops its complexity through 24 months of ageing, French wine acquires its character resting in oak barrels, and German Sauerkraut gains its distinctive tang through natural fermentation — Korean naturally brewed soy sauce is equally an art form shaped by time.
Authentic ways to enjoy Sempio Royal Galbi-jjim Sauce as used in Korean households — one bottle, endless Korean dishes.

This product is a ready-to-use marinade and braising sauce developed to let you recreate Galbi-jjim — a traditional Korean royal court dish — easily at home. Galbi-jjim was a prestigious dish served at Joseon Dynasty royal banquets: beef short ribs slowly braised in a blend of soy sauce, garlic, ginger and fruit purée until deeply flavourful and fork-tender. To use: place approximately 1–1.2kg of beef short ribs in a pot, add the full bottle (190g) of sauce and about 300ml of water, cover with a lid and braise over low heat for 1 hour to 1 hour 30 minutes. Adding carrots, daikon radish and chestnuts makes for an even more complete dish. Beef short ribs or flanken-cut beef from your local European butcher work perfectly.
Yes, this product contains allergens that are subject to mandatory labelling under EU Regulation 1169/2011. The confirmed allergens are: ① Gluten — the soy sauce contains wheat and soybean; wheat extract is also included separately. Those sensitive to gluten should avoid this product. ② Soybeans — present in the soy sauce and soybean peptide concentrate. ③ Sesame — sesame oil is included. Additionally, the product may contain traces of crustaceans, fish, egg, milk, peanuts and tree nuts due to potential cross-contamination during manufacturing. If you have a severe allergy, please review the full ingredient list carefully before consuming.
No, this product is not suitable for vegans or vegetarians. It contains Disodium Inosinate (E631), a nucleotide-based umami flavour enhancer that is typically derived from animal sources (fish or pork). It is also not gluten-free: the soy sauce contains wheat, and wheat extract is additionally listed as a separate ingredient — those with gluten sensitivity should avoid this product. The product does not carry halal certification. This sauce is designed for use with beef and other meats in traditional Korean Galbi-jjim cooking.
Yes, this product contains a small amount of alcohol. Seasoned rice wine (Cheongju) is included at approximately 3.37%, so this product is not alcohol-free. Please be aware if you avoid alcohol for religious or personal reasons. Regarding sodium: as a concentrated marinade sauce, the salt content is approximately 5g per 100g, which is relatively high. However, since the sauce is always used to cook large quantities of meat and vegetables rather than consumed directly, the actual sodium intake per serving is considerably lower. Those following a low-sodium diet should adjust the amount used accordingly.
Before opening, store in a cool, dry place away from direct sunlight at room temperature. After opening, refrigerate immediately (below 4°C) and use as soon as possible. We recommend consuming within 7–10 days of opening. Transferring any remaining sauce to an airtight container will help maintain freshness. The best before date is printed on the bottom or side of the packaging in 'Best Before' or 'BBE' format. As a compact 190g bottle, it can typically be used up in one or two Galbi-jjim cooking sessions, so long-term storage is rarely a concern.
