Tteokguk rice cake slices (Tteokguk-tteok) are traditional Korean rice cakes (tteok) cut into thin, oval discs. The ingredient list is minimal — rice, refined salt, and food-grade alcohol (ethanol) — making them a very clean, simple product. The flavour is mild and neutral, while the texture is distinctively chewy and springy. Think of them as similar in texture to gnocchi or a very chewy pasta. They are primarily used in Tteokguk, a clear broth soup, but can also be used in stir-fried dishes.
Yes, this product is suitable for both vegans and vegetarians. The ingredients — rice, refined salt, and food-grade alcohol (ethanol) — are entirely plant-based with no animal-derived components. Please note that the product contains a small amount of food-grade alcohol used for preservation purposes, so it is not alcohol-free. As this product does not carry halal certification, it is not recommended for those following a halal diet.
This product is made exclusively from rice and therefore contains no gluten by nature. Wheat, barley, rye, and other gluten-containing grains are not included in the ingredients. However, no official gluten-free certification mark has been confirmed, and the manufacturer (Jongga / Daesang) has not officially verified the absence of cross-contamination risk at the production facility. Individuals with coeliac disease or severe gluten sensitivity are advised to contact the manufacturer directly to confirm cross-contamination status before purchasing.
The alcohol (ethanol) in this product is food-grade ethanol used as a natural preservative to maintain freshness and inhibit microbial growth in the rice cakes. It is not the same as drinking alcohol and is used only in small quantities. Under EU food labelling regulations, the presence of alcohol must be declared on the label, and this product is therefore not alcohol-free. Additionally, food-grade ethanol may contain trace amounts of sulphites; if the sulphite content exceeds 10 mg/kg, it must be declared as an allergen under EU Regulation 1169/2011 (Annex II). Individuals sensitive to sulphites should exercise caution.
This is a refrigerated product and must be stored in the fridge (0–10°C) after purchase. Once opened, reseal and refrigerate, and use as soon as possible. Before cooking, soak the rice cake slices in cold water for about 10 minutes to soften them — this shortens cooking time and gives a better chewy texture. When added to boiling broth or water, they are fully cooked in approximately 8–10 minutes; they are ready when they float to the surface and become translucent throughout. Freezing is also possible; if frozen, thaw overnight in the refrigerator before use.
